Kabuto Edomae in Las Vegas' Chinatown is a fantastic sushi restaurant. Kabuto's dinner menu is priced between $50 and $100. But it's well worth the extra. The sushi fish is imported directly from Japan.

Umiya Sushi can be found in Chinatown. Umiya is just 5 minutes away by Uber from the Strip. Their menu is straightforward, making it simple to order. Umiya provides soups. The restaurant offers a $25 lunch offer every day between 11:30am and 3pm. Kids under 36 inches tall can eat here free of charge. The price is reduced for children aged 36 to 52 inches ($13.95).

Some AYCE eat-in places may skimp on quality, but they don't compromise on Umami. Every item on the menu, from the nigiri and the hand rolls, is delicious. The all-you'll-eat lunch menu starts at $25.95 and the dinner menu starts at $29.95. Sushi 21 can be found near Excalibur. You can walk to it, but you can get a taxi or Uber from there.

Kabuto's specialty is Edomae Sushi. This traditional Japanese dish is served at Kabuto. This type of sushi was originally created in Tokyo as street food almost 200 years ago. It has since evolved to be a fine dining experience. Nigiri is a small piece of raw fish or marinated fish that is applied to small pieces of vinegar rice. These exquisite pieces of fresh fish are meant to be consumed as soon as they are prepared by the sushi master. Kabuto offers three Omakase course options and an a la carte menu with an appetizer, sashimi and miso soup. Kabuto's Chinatown branch is located just west of the Strip. It's well worth the short drive.
